Turning Variety Trials into Real-World Insights
Morning Star’s new APEX pilot plant is giving our variety trialing program a closer look at what happens to a tomato beyond the field. Built at one of our southern California processing facilities, APEX allows small, replicated field trials to move through the major steps of commercial tomato processing in a highly controlled environment. By evaluating everything from yield and Brix to processing efficiency, viscosity, color, flavor and finished-product performance, we can better understand what makes one variety perform differently from another.
