I.

Product Description

Red, ripe tomatoes are washed, sorted, peeled, diced, and then sorted again. After the final sort, the tomatoes are immersed in calcium chloride and then aseptically processed. The processed tomatoes in juice are filled into an aseptic bag. Citric acid is added to control acidity. The diced tomatoes in juice shall be processed in accordance with good manufacturing practices. The product shall conform in every respect to the provisions set forth under the Federal Food, Drug and Cosmetic Act, and shall meet the standards established by the USDA and the California Department of Food and Agriculture.

The contents of the container shall receive a thermal process proven adequate to rid the product of microorganisms of public health and spoilage significance. Containers of product after incubation for 30 days shall show no signs of product spoilage (i.e. microbial growth which is visible upon opening, pressure development within the bag, atypical changes in product color, aroma, texture, character or appearance).
