| Once through the hot break, the tomato product enters a pulp tank, which acts as a buffer for efficient system flow. The tomato product is then forced through devices called finishers, which essentially are screens, of various sizes, which allow only certain sized tomato particles to pass through. They are used primarily to extract seeds and residue. Different sized screens are used, the most common being with holes of (measured in inches): .020, .033, .045, .060, .078, .090, .125, .156, and the largest, .250 (1/4 of an inch). The larger sized screens allow seeds to pass through for specialty pack purposes. After passing through the finisher stage, the product enters another holding tank, ready for the next major stage, the evaporators. | |
